Tina H, I just made 2 batches (10 lbs' worth) for some of my husband's customers that he's seeing this week- the entire house smells of hot, yummy fudgy goodness! He calls me &quot;Willamina Wonka&quot; this time of year... usually over 100 lbs made and given away. </description>

					<description>Louise, I have a much smaller version which seems about the same only you make in the microwave and it only takes 2 minutes.

Use at least a 1.5 quart dish to mix it, and prepare a pan with waxed paper to pour it into
1 pound confectioner sugar
1/2 cup cocoa powder
1/4 tsp salt
1/4 cup milk
1 tablespoon vanilla
stir these until partly blended, they  will be too dry to fully mix. 
add 1/4 pound (1/2 cup, or one stick) butter on top 
microwave for 2 minutes on high. Stir vigorously until smooth. 
At this point, optionally add 1 cup of chopped nuts, any kind. Mix. Pour into lined pan. </description>

Louise's Big Batch Fudge:

3 sticks butter or oleo
1 cup milk
1 teas salt
1/4 cup vanilla

Bring to rolling boil in heaviest huge pot you have, preferably an old fashioned &quot;pressure cooker&quot; and use your heaviest-handled whisk to best &quot;open up&quot; the fudge. Lay out a large cookie sheet to pour the fudge into; if needed, place a hand towel under it as not to scorch your counter top or table! Continue to cook at high heat:

Add 1 2 lb bag of confectionary sugar and mix well.

Add one 8 oz can of dry cocoa and mix well.

Add ANOTHER 2 lb bag of confectionary sugar and mix well.

Stir and cook for 7-8 minutes; should be very hot and boiling when you are done and your arm and shoulder should be ready for an ice pack. Pour immediately onto the cookie sheet. Allow to cool at least 20-30 minutes; cut when cool enough into pieces. I cut 8 rows lengthwise and 12 the other way, making 96 pieces.
